幸せを紡ぐ、小さな日々の積み重ね/ ピリ辛トマトシチューのレシピ/ Paris 暮らしのvlog

Hello, it’s Mamiko from GOROGORO KITCHEN. This year, autumn has been much warmer than usual. Yet, we feel the “autumn of appetite” (as we call it in Japan) and we are tempted by delicious food every day…..😅 Well, the foodies🐱 in my family are starving regardless of the season.

To eat well, nice plates are indispensable, aren’t they? Thanks to such a good excuse, we have acquired new plates, but our cupboards are almost over capacity. But I have ambitions to add more chopstick rests… By the way, I prepared something that is indispensable in our house this summer.

Not Umeboshi (pickled plums), but pickled apricots. As a lover of Japanese food, I thought, “I can’t live without Umeboshi!” but surprisingly, I was easily OK with pickled apricots. Just like making Umeboshi, the enemy of making pickled apricot is mould. So, everything used is disinfected with alcohol.

It is better to disinfect apricots with alcohol before putting them in a storage bag. Add honey equivalent to 10% of the weight of the apricots. Add salt, also equivalent to 10% of the weight of the apricots. Spread them well throughout the apricots. Vacuum-packed by human power!

Wait for the apricots to release their juices, turning them over every day. After one week. Making salted red Shiso, which is the key to the flavour. Wash the red Shiso well and dry thoroughly. Prepare salt equivalent to 20% of the weight of the red Shiso. Put half of it in a bowl.

Add the red Shiso and rub well. Rub rub rub …… Still more …… When the dark lye comes out, squeeze the leaves well. Add the rest of the salt and rub more. Squeeze the lye out again and it’s ready. Add the red Shiso to the pickled apricots with its juice.

Soak for another 4 weeks. Now it’s all dyed red! Spread out the apricots on a colander. The remaining apricot vinegar is put into a bottle. Squeeze the red Shiso well and spread it on a colander. Let all sunbathe for three days and it’s done.

We bought this cat basket at a flea market during our summer holiday. I was worried if they would go in it, but surprisingly they both loved it. “Take my pre-emptive strike!” “Tola ……you will regret it ……” I received several wonderful gifts in October. The first one was a My Little Box from Japan.

Because, in the booklet in the box, they did an interview with me. This box has a monthly theme. The theme for October was “Balade Artistry”, so here’s what I got. Various cosmetics and other fun things💕 There’s also a lovely flower vase ❤️ What shall I use it for?

Secondly, flowers from Eriko’s garden, which we receive every year. The new (but old) vases we bought at flea markets look perfect with them. My heart lightens up when I have beautiful flowers like these in our house. Even though it’s a warm autumn, I have to start preparing my winter clothes.

I once interviewed a Japanese actress and asked her “What kind of person do you think is beautiful?” She replied, “Someone without hairballs on sweaters!” and everyone there started removing hairballs😅. Since then, I’ve been careful about hairballs…… European water is hard water.

If you don’t use distilled water, lime builds up in the steamer. I love winter clothes because I can dress in layers to enjoy the various way. Can’t wait to wear this cardigan, my favourite one. Here is the third gift that made me really happy.

For my birthday in October, Tsu-san gave me this ring I wanted ✨. Coloured stones, gold, clover. Everything I love. To enjoy it, we went on a date together. It’s been a while! In the park, we met a man who was walking his cats.

It’s amazing that he can let them walk without leads. Somehow, she looks like Kurumi…? 🤔 We were supposed to go to the museum, but we ended up going to the flea market 😅. But I found the silver knives I’ve been looking for ages! Tsu-san got this lovely pink sweater.

We had a fun time shopping! When we got home, it was already dinner time. Today’s main dish is spicy tomato stew with meatballs. Cut 1/2 courgette into round slices. The aubergine was full of seeds 😂. Still, we’ll eat. Cut 1/3 aubergine into bite-sized pieces. Cut the bell pepper into 1 cm pieces.

Cut 4 mushrooms into quarters. I don’t discard the stems, we can eat them! Roughly mince 1 garlic clove. Let’s make the meatballs. 300 g minced beef, 1 egg, 1 teaspoon whole cumin, 2 pinches salt, 2 teaspoons potato starch, a pinch of pepper. Mix all well until it gets sticky.

Place a pan over medium heat and fry 100 g bacon. When the fat is released, add the garlic and continue frying. Add 1 can of tomatoes in water and crush the tomatoes well. Use an empty tomato can, add 1 can of water and bring to the boil.

Add 3 teaspoons of chicken stock and 1 teaspoon of harissa. Add the mushrooms, aubergine, courgette and bell peppers. When the vegetables are lightly cooked, add the meatballs rolled into bite-sized pieces and bring to simmer. While waiting the stew to be cooked, let’s prepare the couscous.

Put 2 cups of water, a pinch of salt and 1 teaspoon of olive oil in a saucepan and bring to the boil. Add 2 cups of couscous, cover, remove from heat and leave to steam. After 4 minutes, add a knob of butter and loosen it all up.

Finally, season to taste with salt and pepper. When the meatballs are cooked, the stew is ready. Now let’s eat! Wow! It looks delicious. -Yes, it’s ready. -Thank you very much. Let’s eat. Yes. It’s spicy tomato stew. Looks delicious. It’s something you’ve eaten many times. Yes. But it’s always delicious. Cheers.

I’ll put the dressing on the salad. Please. You can eat. I’ve never thought couscous was tasty or wanted to eat it, but after eating this, I started to like couscous. Tsu-san used to dislike many things. Not that I don’t like it, but I don’t crave for it either.

I never felt that “Oh, I want to eat couscous today”. Humm, I never felt “I want to eat couscous” either… Yeah? See? But with this stew, I think, “Oh, I want to eat them today”. This liquid-ish feeling is probably just right with couscous.

I don’t think it goes well with it if it’s mushy like curry. Delicious. This time, I reduced the spiciness a bit. Hmmm, yes. But I can’t really tell. It’s spicy anyways. Really? I used to use more harissa. But the “premium harissa” we use is super spicy. Is it? But it’s just right.

It’s so spicy that I wonder if the French people can really eat it. Whenever I lick it, I feel like ‘oh my god, so hot!’. Harlissa is from Tunisia. I wonder if Tunisians eat spicy food. I have the impression that people from hot countries eat spicy food.

It must be hot in Tunisia too. Yes, it must be hot, it must get to about 40°C. Yes. But, you know, I went to Egypt and I didn’t get the impression that Egyptians eat spicy food. Oh, really? That’s surprising. But, generally, people from hot regions eat a lot of spicy food, don’t they?

But Moroccans don’t eat spicy food either, do they? That’s true. People from Okinawa don’t eat spicy food either. Yes they do, they use Koregusu. What is Koregusu? -You don’t know? -No, I don’t. It’s a condiment made by soaking chilli peppers in Awamori (Okinawa’s Distilled Spirits).

People use it with Soki Soba (Noodles in Okinawa) and all other things. Thai food is spicy. When I went to Thailand, it was so spicy that I got a stomachache. Thai curries are sometimes incredibly spicy. It’s not spicy anymore, it’s bitter. I didn’t think so,

But the next day, I felt so sick with stomachache. And Bhutanese food is spicy too. Oh really? I mean, I can’t imagine Bhutanese food at all. What do they eat? I don’t really know because I ate only at a hotel when I was there on business.

Basically, the food in the hotels is somewhat mildly seasoned for tourists, so it wasn’t that spicy. But I heard that what the locals eat is very spicy. I wonder what it is about. Do they have a totally different sense of taste? You get used to the spiciness.

But even so, everyone finds it spicy at first. Are they fed spicy food from babyhood? Maybe they use the chilli as a pacifier. After weaning… The chilli pepper is the pacifier. Otherwise they won’t get used to something so spicy. Hmmm, I don’t know.

But anyway, the only image I have of Thai food is that it’s super spicy. I haven’t been to Thailand for a long time. When was the last time? Tsu-san, did you go to Thailand for work? Yes, I did. What did you do there?

You want me to tell you what I did for work? Did you shoot golf courses? No, no. I went to a circuit. A circuit? Why? There’s a circuit track. I can’t mention names because of confidentiality, but I was there to shoot a brand.

They asked me to take photos at the circuit track owned by the brand. Did you go from Paris? Not from Paris, it was when I was still in Japan. So, more than a decade ago. Tsu-san has been to many countries. Relatively. What’s that, who do you think you are?

It’s like, ‘You’ve been to many countries too, well done!” Because I’ve been to a lot of countries for work. That’s true. You’ve been to a lot of places. So, where was the best place you’ve been to so far? A country? It can be a place or anything.

Tell me the place you thought the best. When I was still living in Japan, I was often asked that question. Every time I said, “Well, it’s a cliché, but Hawaii was the best”, and everyone was surprised. Hawaii? Yes. That was the reaction I got from everyone. That’s too unexpected. Because it’s pleasant,

There’s a nice breeze, the weather is always good, I thought it was a wonderful place. I thought it was a wonderful place. Are you saying you like the sea breeze? Not really, but it’s a place with a nice breeze. Do you understand? When you say Hawaii, which islands?

I’ve been to almost all of them. What island do you prefer then? But Oahu is a very touristy place. Well, even Oahu had a very nice breeze. And Kauai was very rustic and nice. Also the big island of Hawaii was interesting. Right. Big island of Hawaii is fun, isn’t it?

I’ve driven around the big island of Hawaii too. I went to Oahu for a friend’s wedding, then a couple of friends who were also there asked me to travel around big island of Hawaii with them. So the couple and I, the three of us, travelled together.

You must have been an intrusion. No, I wasn’t. Well, at first I thought so too, but they asked me to go with them, so I said OK. -Maybe they fought every night because of you. -Well, maybe, I’m not sure. I was foolish enough not to realise it at all.

You don’t know how to read the room. I thought other people were going too, but it was only me. So we travelled around the island for about 3 days. Three of us, a couple and me. On the last day, we went to the airport, saying it was so fun.

Believe me, it’s true. We were taking photos of the sunset and so on, saying “That was a great trip”. We were waiting for the plane there, but we didn’t get any call. I thought, “what’s going on?” and went to the desk to ask about the situation.

And they told me that the plane had already left. We missed the flight. There was no final call or anything. The next thing we knew, the plane had taken off. Why do you think you would be called? Well, we were already inside the airport.

We had already checked in our luggage and we were waiting. -What do you mean you were called? -I don’t know, but… “Tsu-san, where are you?” or something like that? No, no. The airport of Hawaii was kind of laid-back, so there were no call like “Attention please”. But it’s not something always done.

It’s true, but when we noticed it, the flight was already left. We really didn’t notice it at all. So we were in big trouble. That’s simply your carelessness… Well, you’re right, I was careless, but we had so much fun and I wanted to take it all in.

There was actually a nice breeze too. All of us were saying, “That was a good youth trip”. Then, there was a very nice Japanese staff at the airport, and she took care of us. I don’t remember if we stayed in a hotel or in her house.

Did you stay at her house?! I forget, but she took care of our problem and went back to Oahu the next day. We were very careful not to miss the flight again, and we were able to go back to Japan.

Well, that is the memory I have of the big island of Hawaii. So where is your second favourite place? Second? Well, I thought Hawaii was wonderful when I was in Japan. But when I came to France, a friend invited me to go to Southern Italy.

I had never been interested in it before, but it was close and I thought I’d give it a go, and it was amazing. Since then, I’ve been hooked on Southern Italy. So now I think Southern Italy is great. Southern Italy is great, I want to go there again.

Tsu-san has finished eating. That was quick. Yeah, it was really good. -How about additional couscous? -I’ve already had it. On top of that, I’ve already finished eating it. It was very tasty. Every time I think it’s delicious. Thank you for the food. Thank you for the food.

After dinner, I still need to work… 😂 Tola is on my lap, as usual. He can be distracting, but I am still happy that the cat show his affection. Even in the smallest daily details, happiness is shaped by the accumulation of these happy feelings.
